Your hair sounds a lot like mine, though I'm female. About the same
length, very thick, somewhat naturally coarse and I've described it
with exactly the same word "fluffy" if I don't use the right
products.
Instead of weighing it down, if you hair is indeed like mine, you need
to make sure it is properly moisturized. I've used Redken shampoos
with great success but so far the most moisturizing of all for my hair
is Tigi Dumb Blonde (I'm a brunette, dumb or not I leave to others to
decide). :) It keeps my hair soft and shiny and not looking like I
put my finger in an electrical socket. A couple of times a month I
use Redken Hair Cleansing Creme and Redken Heavy Cream conditioner.
I found that my problem was using the wrong products in the shower,
not which ones I was using outside.
Depending on the hairstyle you want, you might want to use a mousse
for further flyaway control. I personally use Paul Mitchell medium
hold the 'medium' is just right as long as I use the right
shampoo/conditioner routine. If I want a more tousled look I use a
Redken wax gives you that piecey look.
Trust me when my hair was longer, it looked like Yoko Ono's in her
heyday. We're talking total FOOF! type hair.
The products to control my fluffy hair are not the least expensive out
there but they go a long way. Plus when I think of all the years I
spent on the losing battle with my hair and I tried everything I
could think of to "weigh it down", just like you mentioned then it's
totally worth every penny.
Do you have a stylist you see regularly? Not just someone who cuts
hair. Ask him or her for recommendations. Explain the problem,
mention what you've tried and tell them exactly what you want. If
they know their stuff, they'll be able to show you exactly the
products you need to use, and perhaps a change in hairstyle that will
facilitate it.

explanations than I could. I'm just a fellow fluffyhaired person who
has learned to get it under control. :)
